Hotel Room Gourmet

Well, we’re back on the road. This year in Aspen, our king room has been reduced to a queen room that has about 120sf. We do have a fridge and the microwave upstairs is at our disposal, so we’re making do.

Eating out in Aspen gets expensive very quickly, ($12.00 for a hamburger and fries?!), so we try to keep it close to the hotel and healthy. Hence, the Hotel Room Gourmet. I’m a little bit behind, so I’ll try to catch you up on our successes to date.

Saturday, I started out with something fairly simple, that turned out absolutely delicious! Chicken and dumplings. I added carrots, celery, and peas to give it more oomph and used fat free cream of chicken and cream of mushroom soups. I also quartered the amount of biscuits, but still ended up with, what I felt were, too many. Still, it was a hit and is on the ‘do again’ list.

Sunday, it was vegetarian lasagna. I’ve done this one before and actually took a microwavable lasagna recipe and just put it in the crock pot. It was a little gooshy, but still quite good.

Last night, we used “A Man, A Can, and a Microwave” cookbook and did a Meatless Monday One Fish Dish. This one was so easy. Took about 5 minutes to throw together, 9 minutes to cook, and less time to devour. Another hit on the ‘Make it Again’ list.

This was dinner on Monday. Cod in a tomato and corn salsa with a fresh green salad. All made in the hotel.

    Slow cooker aka Crocker in the hotel room is so clutch!
